Gluten Free Cauliflower Cheese Bake is so easy and so delicious.
5g ghee or preferred cooking fat
300g cauliflower
2 medium leeks
100g frozen peas
15 baby plum tomatoes
1-2 green chilies
200ml chicken stock
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1/2 teaspoon paprika
1/2 teaspoon Italian herb mix
80g grated cheddar cheese
Method:
Stage 1
Grate 300g of cauliflower.
Chop 2 medium leeks.
Stage 2
Add 5g ghee to a large frying pan.
Get the leeks in.
Add the cauliflower.
Add some chicken stock for flavour and to prevent a dry sticky pan.
Add tomatoes.
Add the peas.
Add the green chilies.
Add the seasoning.
Sauté everything until it starts to soften.
Stage 3
Add a layer of the mixture to a ramekin.
Add a layer of cheese
Add another layer of vegetable mixture.
Top with cheese.
Stage 3
Finish under the grill.
